It has all the pizza flavors we love, but it comes together in minutes on thick slices of fresh milled sourdough bread. Pizza toast is a true comfort food that shows up a lot on my table because it is quick, budget-friendly, and easy to customize. It is especially handy during busy weeks, or those evenings when you need something warm and filling without making a full meal from scratch.

I find it practical to use up last slices of any bread this way: from my 100% fresh milled loaf to my soft sandwich loaf with fresh milled flour.

If quick pizza style snack food is something you like to have often, you have to give my sourdough pizza rolls with fresh milled flour a try!

Important Ingredients

  • Fresh milled sourdough bread this is the base. It holds everything together and gets nice and crisp in the oven.
  • Pizza sauce adds flavor without making the bread soggy.
  • Cooked ham (prosciutto cotto or ham) cut into small squares so it spreads evenly on every slice. Prosciutto cotto is what I usually use because it’s what I have available locally, but regular ham works just fine too.
  • Mozzarella cheese melts over everything and brings it all together.

See recipe card for quantities.

Substitutions & Variations

  • Change the protein: You can swap ham for pepperoni, cooked chicken, or even skip it for a simple cheese version.
  • Add vegetables: Sliced mushrooms, peppers, or olives work really well here.
  • Cheese options: Mozzarella is classic, but mixing in a bit of cheddar or provolone adds extra flavor.

How to Make Sourdough Pizza Toast

Whole grain bread slices dusted with flour for baking or toast.

Step 1: Set your oven to broil (top heat only) at 220–230°C (430–450°F).

Slice the loaf into about 10–12 slices (Image 1).
Aim for slices that are not too thick so they crisp up nicely, but still sturdy enough to hold toppings.

Optional pre-toast (recommended)
If your bread is very fresh or soft inside, place the slices on a baking sheet and bake them for 3–4 minutes at 200°C (390°F).
This helps prevent soggy centers later.

Step 2: Spread a thin layer of pizza sauce over each slice.
Add the cooked ham, then top with shredded mozzarella (Image 2).

Return the slices to the oven and broil for 5–8 minutes, until:

  • the cheese is melted and bubbling
  • the edges of the bread are lightly crisp

Keep a close eye on them here, since broilers can brown quickly.

Cheesy ham toasts with fresh milled bread, melted cheese, and savory ham slices, perfect for a heart.

Step 3: Let them cool for a minute or two, then cut each slice diagonally into triangles (Image 3).

Hint: keep a close eye on the broiler. Broilers can go from perfectly melted to too dark very fast. You want bubbly cheese and lightly crisp edges, not dried-out toast..

Baking Schedule

This is a great last-minute recipe, but you can still break it up to make busy days easier.

You can slice the bread and prep the toppings ahead of time, then assemble everything right before broiling. If your bread is extra fresh and soft, I recommend doing the quick pre-toast step just before adding the toppings so the slices stay crisp underneath.

A simple rhythm looks like this:

  • Slice the bread and preheat the oven
  • Optional: pre-toast the slices for 3 to 4 minutes
  • Add sauce, ham, and cheese
  • Broil for 5 to 8 minutes until hot, melty, and lightly crisp

Because the broiler works quickly, this recipe is best assembled and baked right before serving.

💭Crucial Success Tips

Use a thin layer of sauce, not a heavy one. Too much sauce makes the center soft before the top has time to brown. If your bread is very fresh, soft, or thick-cut, go ahead and pre-toast it for a few minutes first. That little step makes a big difference.

Recipe FAQs

Can I use regular sandwich bread instead of sourdough?

Yes, but sourdough gives better structure and flavor. Fresh milled sourdough also holds up better under the toppings, especially if you want that crisp outside and chewy center.

Do I need to pre-toast the bread first?

Not always. If your bread is a day old or already a little firm, you can usually skip it. If the bread is very fresh or soft, pre-toasting helps keep the middle from turning soggy.

What toppings work best on pizza toast?

Ham and mozzarella are simple and kid-friendly, but pepperoni, cooked chicken, olives, peppers, mushrooms, or just cheese and sauce all work well too. The best toppings are ones that are not too wet.

Can I make this in an air fryer instead of the oven?

Yes!! One of the recipe tester tried this, and it works, as long as your slices fit. Use a moderate temperature and watch closely near the end so the cheese melts without burning the edges.

How To Store Sourdough Pizza Toast

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer so the bread gets crispy again. It doesn’t freeze well once baked, so it’s best made fresh.

Ingredients

  • 1 fresh milled sourdough bread from my basic loaf recipe
  • 150 g pizza sauce
  • 120 g cooked ham prosciutto cotto, diced or thinly sliced
  • 120 g mozzarella shredded

Method

  1. Set your oven to broil (top heat only) at 220–230°C (430–450°F).
  2. Slice the loaf into about 10–12 slices. Aim for slices that are not too thick so they crisp up nicely, but still sturdy enough to hold toppings.
  3. Optional pre-toast (recommended): If your bread is very fresh or soft inside, place the slices on a baking sheet and bake them for 3–4 minutes at 200°C (390°F). This helps prevent soggy centers later.
  4. Spread a thin layer of pizza sauce over each slice.
  5. Add the cooked ham, then top with shredded mozzarella.
  6. Return the slices to the oven and broil for 5–8 minutes, until: the cheese is melted and bubbling; the edges of the bread are lightly crisp
  7. Keep a close eye on them here, since broilers can brown quickly.
  8. Let them cool for a minute or two, then cut each slice diagonally into triangles.

Notes

  • Don’t overload the toppings. Around 10–15 g per slice is enough to get that perfect balance between crispy bread and melty topping.
  • You have not enough Humanizer words left. Upgrade your Surfer plan.
  • add that i cut up cooked ham into small squares. also, say that i like to use proscutto cotto (cooked proscuto) but ham works too
  • This is one of those things I make when I have a loaf on the counter and don’t feel like overthinking lunch or snacks. It’s quick, it uses what I already have, and once you cut it into triangles, it suddenly feels like something you’d actually serve to guests.
