I'm a busy mom, and if you're like me, I'm sure you've experienced when it's 4:45 PM, and you suddenly realize... You have no plan for dinner.
When this happened to me, I always had the go-to dinner recipes that I could make in low effort, and were ready to make in no time.
I first start to check what's available in my pantry: leftovers, eggs, pasta, rice, bread (particularly sourdough bread, cause I'm a sourdough baker), cheese, frozen veggies, and canned goods (beans, tunas, tomatoes)
Once, I checked all the pantry staples available to me on hand. I now started to make meals from that, and most likely I started with these easy meals!
Scrambled Egg

This is the best no-time dinner recipe. Just sauté whatever you have—leftover veggies, bits of meat, even that last slice of ham—and add scrambled eggs on top. Serve it with toast or wrap it in a tortilla.

If you're a sourdough baker and have sourdough bread, you can easily top these scrambled eggs or make an egg sandwich.

Some nights are about survival. Some nights are about using what you have. And some nights are just grilled cheese and calling it a win.
And that’s okay.
